I'm not sure what language the actual game is programmed with.
The original graal game was java i'm pretty sure.
GS or GraalScript (GS1/GS2/GS3 <- GS3 is rarely used by scripters as far as i know) is a scripting language designed to be able to be used to create content
from within the game itself, it's not the language the actual game is made with

The original Graal Online was made in Java, it was a Java applet when it first started.
The version of Graal you see today is based on the Torque Engine (at least GK used it, I know that much).
The actual servers are programmed through Graal Script 2, which is Object Oriented, similar to a C language.
Correct me if I'm wrong because this is just what I remember I don't know what's under the hood of the latest client and servers.
