Assuming it's not just placebo, my ping went down from 100 to 50. Feels good man. Ideally we would have servers in US West, US East, Central Europe and Eurasia/Australia that all connect to the same place but I wouldn't see that happening.

Thats not really possible. The whole issue is that you can only have 1 server receiving and sending information. If you add another one then they cant both receive and send the same info, even if they could, one would be more efficient making it useless to have two.

The game could have different servers though, like many other games already do. But the issue with that is that the player-base would be split across servers. Some people would also server-hop to a server less populated with the purpose to boost. For example a less populated server would have less people playing, that means more trash, mushrooms etc, higher chance to win events and so on and so forth.
