Ahh I had an attempt at this too. Look for reference images. You'll see that you'll have to make a diagonal sprite with it releasing the knife.

I realized that a big problem was the blade, so I changed it to make it look better

I think it was better before, now its symmetrical and I don't think you have want that.

I tried making an opening animation, and I think I got it pretty good. All I need to do now is a diagonal blade :s
